Mordocofe produces a some fantastic coffees in the Sidamo growing region. We've featured their washed coffees in the past, and this year we found a very nice natural (dry-processed) coffee.
Naturals are coffees that are dried in the cherry as opposed to washed coffees where the cherry and pulp is removed before the coffee is dried.
Drying the coffee in the cherry requires careful attention at every stage or the producer risks enzymatic reactions that leave the coffee tasting like vinegar. Properly executed, a natural coffee will be very sweet and dominated by tropical fruit flavors.
In our experience, even exceptional natural coffees can be polarizing. It tends to be a love it or hate it reaction.
